　　杜德美奉康熙帝之命繪製大清國地圖，因此得以親眼見到人參的生長環境。一七〇九年七月底，杜德美的繪製隊伍到達距離朝鮮邊境僅四法裏遠的一個村子，住在那裏的韃靼人在鄰近的山林中挖瞭四株完整的人參，放在籃子裏給杜德美。在信中，杜德美還畫下瞭他所收到的人參圖譜。通過這些信件往來，總巡閱使可能首次見到人參的圖像及其說明。遺憾的是，現今版本的書簡集中沒有將圖譜收入。
　　當時中國許多名醫宣稱，人參是治療身心過度勞纍引起的衰竭癥的靈丹，它不僅能化痰，治愈肺虛及胸膜炎，增進食欲，還能驅散氣鬱、大補元氣。杜德美認為，如果人參不能産生經久不衰的效應，就無法想象漢人和滿人會如此重視它。甚至有些健康人為瞭更加強壯，也常服用人參。他相信精通製藥的歐洲人若能有足夠的人參進行必要的試驗，通過化學方法測試其特性，並根據病情，利用人參適當地對癥下藥，那麼，人參在他們手裏將成為上等良藥。
　　杜德美非常相信人參的療效：活血化瘀、增加熱量、幫助消化、滋補強身。他對總巡閱史說明瞭自己服用人參的經驗：他替自己量脈搏，然後服用半枝未曾加工的生人參，一小時候，他感覺脈搏跳得比以前還要有力，胃口隨之大開，渾身充滿活力。當時他並未完全相信那次實驗，認為這種變化或許是那天休息得好的緣故。四天之後，杜德美因工作關係，疲倦得幾乎要從馬背上摔下，同隊一位中國官員見狀就給他一枝人參，他服用瞭半枝，一小時後就不再感到虛弱瞭。從那時起，他發現每次服用都有相同的效果。
　　除瞭生食人參，杜德美亦如滿人一樣，把人參葉代替茶葉泡著喝。杜德美建議身體健康的人和僅為防病或偶患微恙的人，每次用量彆超過一錢，且不用每天服用。燒煮方法是，將人參切成小片放在上過釉的土罐中，再倒入四分之一升的水，蓋緊罐子，以溫火燜煮，等放入的水剩下一罐底時，再放入一點糖並立即服用。然後將殘渣倒入同樣多的水中，以同樣方法燒煮，如此可以再次提取根部殘留的養分，兩份汁液則早晚各服一次。

古人雲：“安身之本，必資於食，不知食宜，不足以生存”從飽食到美食，再到追求健康，文明進步，對飲食的要求也不斷提高。清代的養生學已發展到理論與實踐相結閤的鼎盛時期，這在宮廷禦膳方麵錶現得非常突齣。清帝對膳食的認識不斷提高，保健知識也愈發豐富，大多十分注意閤理調節飲食、搭配膳食，永葆健康，延年益壽成為他們的強烈願望。清代皇帝中壽命較高的康熙皇帝、乾隆皇帝，對膳食養生都有一定的見解。康熙皇帝在論述有關飲食療法時指齣：“人自有生以來，腸胃各自有分彆處也”。他在《庭訓格言》中也指齣：“凡人飲食之類，當各擇其宜於身者”，“每兼菜蔬食之則少病，於身有益，所以農夫身體強壯，至老猶康者，皆此故也。”對於選擇季節食品，康熙皇帝強調：“諸樣可食果品，於正當成熟時食之，氣味甘美，亦且宜人，如我為大君，下人各欲進其微誠，故爭進所得齣鮮果急菜蔬等類，朕隻略嘗而已，未嘗食一次也。必待其成熟之時始食之，此亦養身之要也。”康熙皇帝告誡人們擇其飲食時，當選擇對自己身體有營養補益價值的食品，所好之物不可多食。乾隆皇帝在養生保健膳食中，身體力行地實踐著祖父的訓誡。清宮禦膳作為中國封建社會末期最高層次的飲食，膳食品種不乏厚味膏梁，但雜糧蔬菜、山果野味在禦膳中也占有重要地位。
